Chocolate Syrup

2 1/4 cups cream
1/2 cup sugar
2 oz dark cocoa powder
7 oz couverture, melted

Bring the cream to a boil with the sugar and sifted cocoa powder. Remove from the heat and stir in the cuverture. Strain and cool.
